When visiting the beautiful white sandy beaches on Anguilla, a must is a visit to Ocean Echo on Meads Bay beach. In business for seven years, owner Judy Hughes, and owners Wayne Hughes and Dillon Cadette, have always dreamed of owning their own business. “We love the service industry and enjoy servicing and sharing with guests on a daily basis. We worked in the hotel and service industry for many years and had the opportunity to be located at this beachside property which is a huge plus!” The International & Caribbean Asian flare menu in combination with an upscale casual atmosphere on the beach, is what makes this restaurant unique. “We are a family friendly, beach side location and years of experience in service is what makes us unique. We are located on one of the best beaches in Anguilla!”
But it is not just the atmosphere and service….Chef Diane Arrindel will infuse your taste buds with the flavors of the Caribbean and Asia with creations such as Rasta Pasta, Sea Island Grilled Lobster, Scrub Island Grilled Crayfish with Jasmine Rice, or Pan Seared Yellow Fin Tuna. Dillon is known as the “mixologist “creating delicious signature cocktails such as the famous drink “Rumzy”.
Thirteen months ago this beautiful island was hit with a Cat 5 hurricane. Judy says “We had no major damage, but did have some minor structural damage compared to other restaurants that lost roofs or in some cases lost everything. We were very lucky. We were closed for one month for minor repairs and we want to thank our customers for their continued support.”
Ocean Echo is open for lunch and dinner and will host private events such as wedding receptions, corporate events and birthday celebrations. For large events, they will actually close the restaurant.
