A steak night lives or dies on two things: a cut that eats tender without eating your food cost, and a sauce bright enough to make the plate feel new. This week’s recipe puts both on one board — Branding Iron Flat Iron Steak under a parsley-cilantro chimichurri with lime and a Scotch bonnet kick.
Branding Iron is one of the beef programs island kitchens leaned on at this year’s Food Show: portion-cut steaks and Certified Angus Beef patties, case-ready and consistent plate after plate. The flat iron is the steak-night star of the line — 8 oz portions, 20 per case (SKU 0644120) — big beefy flavour, and tender when you rest it and slice it against the grain.
The Recipe: Flat Iron Steak with Island Chimichurri
SERVES: 4
CUISINE: CARIBBEAN
CATEGORY: BEEF, GRILL & STEAK NIGHT
Ingredients
The steak
- 4 Branding Iron Flat Iron Steaks (8 oz each)
- Salt, black pepper & granulated garlic
The island chimichurri
- 1 cup parsley + 1/2 cup cilantro, finely chopped
- 4 garlic cloves, minced
- 1 small Scotch bonnet, seeded & minced (to taste)
- 2 Tbsp red wine vinegar + juice of 1 lime
- 1/2 cup olive oil
- 1 tsp oregano
- Salt & pepper
Directions
- Stir the chimichurri together and let it rest at least 30 minutes — overnight is even better.
- Bring the steaks to room temperature for 20 minutes. Season well on both sides.
- Sear or grill 4–5 minutes per side to 130°F for medium-rare. This cut shines at medium-rare.
- Rest 5 minutes, then slice AGAINST the grain and spoon the chimichurri over the top.
That’s the whole trick: sear it hot, rest it, slice it right. The herbs, vinegar and lime cut the richness, the Scotch bonnet builds heat behind it instead of biting up front, and the sliced rows show off exactly how juicy the cut is.
