6 Red & Blue Corn Purses
6 Limes Wheels
2 oz. Jalapeño Cilantro Vinaigrette (see below)
Directions:
1.) Place 6 lime wheels on plate.
2.) Place 3 red and 3 blue corn purses from freezer into deep fryer.
3.) Fry approximately 2-3 minutes or until proper internal temperature is reached.
4.) Drain and place one on each lime wheel.
5.) Serve with a side of Jalapeño Cilantro Vinaigrette for extra spice.
JALAPENO CILANTRO VINAIGRETTE
4 oz. Yellow Onions , chopped
1 tsp. Garlic , minced
12 oz. Fresh Cilantro , loosely packed
1 tsp. Chile Powder
1 Tbsp. Fresh Jalapeno Pepper
1 1/2 oz. Lime Juice
3/4 tsp. Kosher Salt
1/4 tsp. Black Pepper
2 oz. Olive Oil
Directions:
1.) Place onions, garlic, cilantro, chili powder, jalapeño, lime juice, salt and pepper together in food processor.
2.) Puree approximately 15-20 seconds and slowly drizzle in olive oil to emulsify.
3.) Place in squeeze bottle.
4.) Label, date and refrigerate.
